This easy seed & nut granola is one of my favourite nutrition hacks. I add it to my chia pudding and sprinkle it over salads and steamed veg. This granola adds a whopping ten unique ingredients to a meal or snack. It also makes a great afternoon snack with a block of 85% dark chocolate or some goji berries, or cranberries added.
INGREDIENTS
50 grams coconut flakes
60 grams pumpkin seeds
60 grams sunflower seeds
90 grams flax seeds
90 grams sesame seeds
120 grams chopped mixed nuts (no peanuts - raw unsalted)
10ml ground cinnamon
15ml coconut oil
100ml water
1 pinch of salt
5ml raw honey
INSTRUCTIONS
Preheat the oven to 200 Celsius
Mix all ingredients together in a large bowl and allow to stand for 15 minutes
Spread out on a baking tray and roast for 10-15 mins until it turns golden brown.
Remove and let cool.
Store in an airtight container
TERTIA's PERSONAL TIPS
I make my mixed nuts using equal amounts of almond, cashews, pecan and walnuts that I chop up myself.
I add two layers of wax or baking paper onto my tray. This folds easily into a funnel when pouring the granola into the storage container.
This granola is great with yoghurt and chia pudding sprinkled over a salad or with green vegetables like broccoli, asparagus, and green beans.
Also great for a quick snack when on the run
