Watermelon Salad with Feta, Mint, Avocado and Cucumber



This is one of my all-time favourite salads for summer or winter. It's delicious on a hot summer's day and a great way to add freshness and throw-back to summer with a cosy winter lunch. Watermelon is a low-calorie, nutrient-dense fruit with several important vitamins, minerals, and antioxidants. Here are some reasons watermelon is a great fruit to add to your diet:


Hydration: Watermelon is over 90% water, making it an excellent food for hydration.


Vitamins and minerals: Watermelon is a good source of several important vitamins and minerals, including vitamin C, vitamin A, potassium, and magnesium.


Antioxidants: Watermelon contains several antioxidants, including lycopene and beta-carotene, which can help protect against cell damage and reduce inflammation.


Digestion: Watermelon contains fibre, which can help support healthy digestion.


Heart health: Some studies suggest that watermelon may positively affect heart health by helping to reduce blood pressure and improve blood flow.


Weight loss: Because 90% of a watermelon’s weight is water, it’s one of the best fruits to eat if you’re trying to lose weight. A 100-gram serving contains only 30 calories. It’s also a great source of an amino acid called arginine, linked to increased fat burning. However, it should not be relied upon as the sole method for weight loss. A balanced diet and regular exercise are also crucial for achieving and maintaining a healthy weight.


Overall, watermelon is a healthy food that can be enjoyed as a refreshing snack or incorporated into a variety of dishes.


RECIPE


INGREDIENTS - Serves 4


Dressing

2 tablespoons extra-virgin olive oil - I love the the Babylonstoren Olive oil - its light and fruity

3 tablespoons lime juice

½ garlic clove, minced

¼ teaspoon pink Himalayan salt or sea salt


For the salad

5 cups cubed watermelon

1 heaped cup of diced English cucumber

¼ cup thinly sliced red onions

â…“ cup crumbled feta cheese - I love the Woolworths South Africa Feta with sun-dried tomato and basil

1 avocado, cubed

â…“ cup torn mint or basil leaves - my personal preference is Mint

Pink Himalayan salt or sea salt Optional: ½ jalapeño thinly sliced, optional


Instructions


Arrange the watermelon, cucumber, and red onions in a shallow salad bowl or platter. Top with the feta, avocado, mint, (and the jalapeno pepper, if using)


Season to taste and serve with the dressing Make the dressing: In a small bowl, whisk together the olive oil, lime juice, garlic and salt.
